Carpaccio Of Salmon


1 fresh fillet of salmon, boned

2 tablespoons olive oil

1 lime


1 tablespoon pink peppercorns (substitute mixed peppercorns if not available)


1. Slice fish very thinly, with a sharp knife.
2. Arrange on a large plate.
3. Sprinkle with olive oil and lime juice. Season, then sprinkle with dill.
4. Leave to chill for 10 minutes before serving.

Cardinal Prawns


400g prepared prawns

2 tins tomatos

4 carrots

2 yellow peppers

4 shallots

4 clove garlic

8 tablespoons white wine

2 tablespoons olive oil

2 tablespoons snipped parsley

2 tablespoons snipped chervil

Salr & pepper


1. Chop garlic and shallot.
2. Saute in oil over a gentle heat.
3. Add chopped carrots and peeled, diced pepeprs.
4. Mix well, then add tomatoes and prawns.
5. Season to taste and leave to cook for 15 mins, stirring
6. occasionally.
7. Add white wine, reduce for 5 mins.
8. Sprinkle with parsley and chervil.
9. Saupoudrez de persil et de cerfeuil.
10. Serve hot.
